8 AWG is equivalent to 10mm2 which is rated for 69amps ,Yes I that should be fine.

That JayCar cable has a cross-sectional area of 8mm² with a DC current rating of 56 Amps.
Still just fine for your purpose.

Awesome. 😀

Just one more question! How do I check there is an earth on the common negative? There must be eh? It's an existing setup from the UK.

With a multimeter, check that there is voltage between the Battery Positive and Earth.
You can usually find a suitable steel bolt somewhere.
If you are in any doubt, simply Earth the Controller.

Me again! I wonder what I have done wrong with the juntek shunt? I've put the system back on and everything is fine. Judy haven't attached the wires from the solar panel to controller. I have connected the VIN on shunt to the common postive just after the fuse (not the positive on the solar, that's seperate). Connect module to USB on shunt and nothing. Connect module to USB socket and it comes on but doesn't find a signal. I don't think the shunt is getting power for the module/signal etc.

The shunt seems to be getting power as if I switch the switch to 2w a red diode comes on and switching back to 3w it goes off. I think it should be on 3w.

I have a Juntek battery monitor and mine is set for two wire operation as the shunt is supplied from the same battery that supplies power to our caravan through the shunt. 3 wire operation is for when the shunt is supplied from a separate battery supply from the above mentioned battery. A red light on the shunt means it's working and should be sending data to the display unit.
